- Cut avocado into cubes and place in a bowl.
- Squeeze half a lemon over the avocado and gently stir to combine.
- Add half a sliced red onion, 2 cups sliced cherry tomatoes, a diced Lebanese cucumber, a handful of chopped fresh parsley, a small diced green bell capsicum, and a can of EBO Organic Chickpeas.
