Keto Chicken Casserole

Ingredients

1.5 Tbsp Olive oil, divided, 1 Lb Boneless, skinless chicken thighs, 2 Cups Broccoli, cut into small florets, 1 Cup Leeks, sliced, ½ tsp Paprika, ½Cup Grated Parmesan cheese, divided, ¼ Cup Cheddar cheese, grated and packed, 4 Oz Cream cheese (1/2 a brick), 6 Tbsp Heavy whipping cream, 2 Tbsp Mayonnaise, 1 Tbsp Mustard, ½ tsp Salt.

Instructions

- Preheat your oven to 375 degrees.

- Heat 1 Tbsp of oil in a large, oven-safe skillet on high heat.

- Sear the chicken thighs until golden brown on each side, about 3 minutes per side. Once seared, turn to medium heat, cover and cook until the chicken is done.

- While the chicken cooks, place a steamer basket over a pot of water and bring to a boil. Once boiling, add in the broccoli, cover and cook until the broccoli is bright green and tender about 2-4 mins. Drain and set aside.

- Heat the remaining 1 Tbsp of olive oil on medium heat and cook the leeks and the paprika until just softened about 2-3 minutes.

- Turn to medium-low and add in 1/4 cup of the Parmesan cheese, cheddar cheese, cream cheese, whipping cream, mayo, mustard, and salt. Whisk until smooth and creamy. Once done, remove from heat.

- Cut the chicken into small cubes and add it, along with the broccoli, into the pot, stirring to coat.

- Sprinkle the remaining Parmesan over the casserole and bake until bubbly, about 15 minutes. Then, turn your oven to HIGH broil and broil until golden, about 2-3 minutes.

Ingredients

1 Lb Chicken tenders, 2 tsp Olive oil, Seasoning salt

Instructions

- Heat your air fryer up to 380 degrees.

- Toss the chicken tenders with oil and then sprinkle generously with seasoning salt (no need to measure)

- Bake for 8-10 minutes, until an instant-read thermometer reads 165 degrees

Grilled Chicken with Avocado Salsa (Keto)

Ingredients

4 chicken breasts

For the Marinade

2 garlic cloves finely minced, 3 tablespoons olive oil, ¼ cup cilantro chopped Juice of 1 lime, ½ tsp salt or to taste, ¼ tsp black pepper

Avocado Salsa

2 avocados diced, 2 small (or 1 large tomato) chopped, ¼ cup red onion chopped, 1 jalapeno de-seeded and chopped (optional), ¼ cup cilantro finely chopped, Juice of 1 lime, fresh cracked pepper & salt to taste

Instructions

- In a large bowl, whisk all the ingredients for the marinade and set aside.

- Pound the breasts to even thickness or slice them in half horizontally to get evenly sized breasts and add to the bowl of marinade.

- Mix through until the chicken is fully coated in the marinade. Use right away if needed or marinate for 30 minutes or up to 12 hours.

- Grill chicken over medium-high heat or in a large on the stovetop for 5-6 minutes per side or until the inside is cooked through and the outside is charred. Top with fresh avocado salsa and serve immediately.

To Make Avocado Salsa

While the chicken is grilled, combine all the ingredients for the salsa in a small bowl. Cover with plastic wrap in the fridge until ready to use.

Healthy Roasted Chicken and Veggies within 15 min

Ingredients

2 medium chicken breasts chopped, 1 cup bell pepper chopped, ½ onion chopped, 1 zucchini chopped, 1 cup broccoli florets, ½ cup tomatoes chopped or plum/grape, 2 tablespoons olive oil, ½ teaspoon salt, ½ teaspoon black pepper, 1 teaspoon Italian seasoning.

Instructions

-Preheat oven to 500 degrees F.

-Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes. Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, Italian seasoning, and paprika.

-Bake for 15 minutes or until the veggies are charred and the chicken is cooked. Enjoy with rice, pasta, or a salad.

Ingredients

(4 small chicken breasts or about 1 pound, 1 cup shredded mozzarella cheese or your favorite melting cheese, ½ cup grated parmesan cheese, 1 tsp Italian seasoning, 1 tsp garlic powder, salt pepper, to taste, 1 tbsp olive oil, 1 cup marinara sauce pasta sauce)

Instructions

-Preheat oven to 375 degrees. Combine mozzarella and parmesan cheese in a small bowl and set aside.

-Use a sharp knife to cut a pocket into the side of each chicken breast.  Generously season both sides of the chicken breasts with Italian seasoning, garlic powder, and salt & pepper.

- Stuff about ¼ cup of cheese into each chicken breast and fold or seal with toothpicks if available.

-Heat 1 tablespoons olive oil in a large heavy-duty pan over medium-high heat. Add the chicken breasts to the pan and sear for 3-4 minutes per side or until golden.

- Remove from heat and spoon sauce on chicken breasts. Top each chicken breast with a few tablespoons of cheese and bake uncovered at 375˚F for 15-20 min, or until an instant-read thermometer reads 165˚F.

- Serve immediately with a chopped salad, steamed veggies

 

keto chicken thigh recipes

Ingredients

4 (8-ounce) skin-on, bone-in chicken thighs,1 teaspoon paprika, salt and pepper to taste, 4 slices bacon, cut into 1/2-inch pieces, ⅓ cup low-sodium chicken broth, 4 ounces sliced mushrooms, ¼ cup heavy whipping cream, 2 green onions, white and green parts separated and sliced.

Instructions 

- Preheat the oven to 400 degrees F (200 degrees C).

- Season chicken thighs on all sides with paprika, salt, and pepper.

-Cook bacon in a cast iron skillet or oven-safe pan over medium-high heat until browned, 4 to 5 minutes. Remove from skillet and drain on a paper towel-lined plate. Drain and discard excess grease from the skillet.

-Return the skillet to medium heat and cook chicken thighs, skin-side down, for 3 to 4 minutes. Flip chicken over and place the skillet in the preheated oven.

-Bake until chicken thighs are no longer pink at the bone and juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove chicken to a plate and cover with foil to keep warm. Remove all but 2 tablespoons of drippings from the skillet.

-Return the skillet to the stove over medium-high heat. Pour in chicken broth while whisking up brown bits from the bottom of the skillet. Add mushrooms and cook until soft, about 3 to 4 minutes. Pour in heavy whipping cream and whisk together until lightly simmering, then reduce heat to medium-low. Season with salt and pepper, if necessary.

-Return chicken and any juices back into the skillet; top with bacon and green onions. Serve immediately, spooning sauce over the chicken.

 

Keto Tuscan Chicken

Ingredients

2 tablespoons olive oil,2-pound boneless, skinless chicken breast, cut in half horizontally or 4 thin sliced chicken breasts ¼ teaspoon garlic powder, ½  teaspoon paprika, optional, 1 teaspoon Italian seasoning, optional, Salt and pepper to taste, ½  cup chopped onion, 3 garlic cloves, minced, 1/3 cup chicken broth, 1 cup heavy whipping cream, ½  cup freshly grated Parmesan cheese, ½  cup sun-dried tomatoes,4 cups baby spinach.

Instructions

- Season chicken breasts with garlic powder, paprika, salt and pepper on both sides.

- Heat olive oil in a large skillet over medium-high heat and brown the chicken for 4 to 5 minutes per side, or until cooked through. Remove chicken and set aside.

- Saute the onion in the same skillet with the remaining oil and cook for about 3 minutes until soft.

- Add garlic and cook until golden brown.

- Deglaze the pan with chicken or vegetable broth. Pour in heavy cream and reduce the heat to low and simmer until the sauce thickened.

- Add the parmesan and stir until the cheese has melted into the cream sauce.

- Add the sun-dried tomatoes and Italian seasoning if using. Add the baby spinach, stir and cover until the spinach is wilted.

- Return the chicken to the skillet, cover with the sauce and simmer for another minute. Taste and season with more salt and pepper to taste

 Ingredients

1 tablespoon olive oil,1 large onion chopped, 2 large carrots chopped, 2 stalks of celery chopped, approximately 2 cups, 5 cloves garlic minced, 1 teaspoon salt, 1 teaspoon pepper, 6-8 cups chicken broth, 2 bay leaves, 3 lbs. chicken thighs or one whole chicken, 2 cups cauliflower rice

Instructions

- Heat the oil in a saucepan and place over medium heat. Once hot, add the onions, carrots, celery, and garlic and cook until the vegetables are tender around 5 minutes.

- Add the salt and pepper, then the chicken broth and bay leaves, and bring to a boil. Once boiling, reduce to a simmer and add the chicken and cauliflower rice. Cook on low for 30-35 minutes, until the chicken is tender.

- Remove from the heat and serve with fresh parsley and a squeeze of lemon juice. If using a whole chicken, use two forks to pull it apart prior to serving.
